Vegan Chickpea Tacos

Hey hey!

So... I LOVE tacos! And I also LOVE anything that you can just put in the oven and leave for like 30 minutes to an hour whilst you do other stuff. This is definitely one of my go-to recipes whenever I want something easy but delicious to make.

  • A large bowl or a large something into which you can mix all your ingredients
  • An oven pan or baking tray
  • An oven ;)

Main Ingredients: 

  • 1 large onion
  • 1 bell pepper
  • Roughly 2 cups broccoli
  • 2 cups cooked chickpeas
  • 1 teaspoon chilli
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 2 tablespoons soya sauce
  • 1 tablespoon olive oil
  • 3 gloves garlic
  • ½ lime


  • Fillings like tomato, lettuce, avocado, etc.
  • Tacos


  1. Preheat the oven at 210°C
  2. Chop up the onion, bell pepper and broccoli into bite-size chunks
  3. Add the vegetables, chickpeas, spices, soya sauce and olive oil into a large bowl and mix well
  4. Pour the mixture into a baking dish and cook in the oven for 15 minutes
  5. Chop up the garlic
  6. Take out the dish and stir in the garlic
  7. Put the dish back into the oven for 15 minutes
  8. Prepare the fillings and tacos and set the table!
  9. Take out the dish from the oven and squeeze lime juice ALL over it
  10. Prepare the taco and eat!!
